Hey friend!
I don't have the game myself, but from what I hear you cannot mix and match VO and subtitles yourself. Apparently you will need to change your PS5's system language to Chinese. If the game supports Chinese subtitles (which I assume it does) it will then display them.
BUT if Chinese VO was also added, the voices will also change to Chinese by default.
